Here’s something to give to Santa, just let it chill before he eats it!

Keep the winter blues at bay with a special treat that combines two of your favorite things:
Cookies and the grill.
The skillet cookie is a delicious dessert. With just a few ingredients and minimal prep time, you can have this dessert ready in no time. Introducing the ultimate winter treat—a skillet cookie on the grill. It’s sweet, rich, gooey and all kinds of cozy.
1 cup of butter (softened)
1.5 cup of brown sugar or organic cane sugar
2 teaspoons of vanilla extract
2 eggs
1 teaspoon of baking soda
3 cups of all-purpose flour
1/4 teaspoon of sea salt or salt
A 7-10” cast iron skillet
Cast iron skillet: The best type of skillet to use for this recipe is a cast iron skillet. Not only do they distribute heat more evenly than other types of skillets, but they also retain heat very well.
Grill mitt: Make sure to use a grill mitt to safely remove the skillet from the grill once it’s done baking.
Grill thermometer: To safely and efficiently cook the skillet cookie on the grill, you’ll want to keep an eye on the temperature of the grill. A BBQ thermometer can help keep track of the temperature so you don’t have to keep opening and closing the lid.
Preheat the grill to 300F. Grease the skillet generously with butter and set it aside.
Next, you’ll need to whisk together the butter, sugars, vanilla, egg, and baking soda. Make sure they’re thoroughly combined.
Next, add the flour and salt and stir until they’re fully incorporated. Make sure not to over-mix the batter.
Last, fold in the mini chocolate chips.
Pour the batter into the greased skillet and place it on the grill.
Cook for 10-12 minutes, checking the skillet every few minutes to make sure that the top isn’t burning.

Remove the skillet from the grill and serve while still warm.
Try topping your skillet cookie with delicious strawberries.
You can also top your skillet cookie with vanilla ice cream or whipped cream for an extra special treat.
