Chances are good that you've tasted mesquite-flavored dishes before, such as in the seasonings of entrees from your favorite restaurant. However, you might never have had ingredients that were smoked using authentic mesquite wood pellets. The tone of mesquite can be challenging to describe. It's both earthy and robust, with a sensational kick that some people love and others could do without. Mesquite's richness comes from the wood's oils, which allow the pellets to burn hot and give off plenty of smoke.
Like all wood pellets, mesquite varieties can easily be mixed with other types of pellets. By mixing and matching, you can create signature flavors. Consider mingling mesquite and cherry wood pellets in your hopper. The cherry will temper the intensity of the mesquite, and the resulting smoke will give your beef an appealing smoke ring. Want a boost of strong flavor for dishes that you can't leave on the grill for hours? Pair mesquite and hickory for a one-two punch. This combo works particularly well for foods like vegetables and thin cuts of poultry or seafood that won't be on the grill very long.
