Cold Green Bean Salad

This cold green bean salad is perfect for the summer months, when you are looking for something refreshing to serve as a side dish with lighter proteins such as pork, fish, or chicken. This recipe serves a mere guideline and we here at Grilla love it when people take our ideas and make them their own. You can spice this up with chili flakes or choose a different type of cheese that you find more interesting. SO, give this a shot and ENJOY!

Ingredients

  • 1 pound green beans, trimmed and blanced
  • 1 cup grape tomatoes, halved
  • 1/4 cup shaved red onion
  • 1/2 cup goat cheese
  • 4 cloves garlic, minced
  • Zest of one lemon
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1/4 cup Italian dressing
  • 2 tablespoons, Italian seasoning
  • 1/4 cup shaved almonds

Directions

Blanch your green beans by dropping them in a pot of boiling water for two minutes. Immediately remove from the boiling water and place into a prepared ice bath until cold.

Combine the blanched green beans with the rest of the ingredients and mix together until well incorporated.

ENJOY!

TIP: Best if made at least four hours ahead of time or left to marinate over-night before serving.
