Cold Marinated Asparagus

Ingredients

  • 1 bunch Asparagus, ends trimmed off
  • 2 cloves of Garlic, sliced thin
  • 1 Red Onion, sliced thin
  • 1 bottle of your favorite vinagrette
  • Zest of 1 Lemon
  • Salt, to taste
  • Black Pepper, to taste

Directions

– Place the asparagus in boiling water for 3 minutes
– IMMEDIATELY place cooked asparagus in an ice bath until completely cool to the touch
– Combine cooked asparagus with the rest of the ingredients and marinate for at least 4 hours
– ENJOY
