Homemade Mac & Cheese

That’s the only way to describe true mac and cheese from your kitchen — and we’re not talking about the orange stuff that comes from a box.

When you’re craving something that’ll stick to your ribs for lunch or dinner, reach for the ingredients to make this easy homemade mac and cheese.

Ingredients

  • 2 cups Uncooked Pasta (your favorite pasta is what I recommend)
  • 2 tablespoons Butter
  • 2 tablespoons All Purpose Flour
  • 1.5 cups of Half & Half Cream
  • 3/4 pound of Velveeta, cubed

Directions

  • Cook pasta according to package directions; drain.
  • Meanwhile, in a large cast-iron or other heavy skillet, melt butter over medium heat. Stir in flour until smooth; gradually whisk in cream. Bring to a boil, stirring constantly. Cook and stir until thickened, about 2 minutes. Reduce heat; stir in cheese until melted.
  • Add pasta; cook and stir until heated through. Top as desired.
  • ENJOY!!!!!

Picking the Pasta

Does the type of pasta you choose for your mac and cheese matter? Some pitmasters believe it does. That’s why they like to choose pasta with nooks and crannies.

We’re talking about anything from rigatoni to shells. However, you can feel free to buck the standard mac and cheese trends. Try some gnocchi. Toss in meat ravioli for a meat and cheese delight. Or just use up all the leftover pasta in your cupboard.

Go Gluten-Free With Mac and Cheese

A lot of people try to limit their gluten intake for a variety of reasons. If you’re someone on a gluten-free diet, or if you’re cooking for a guest with a gluten intolerance, you can turn this masterpiece gluten-free.

Here’s how to make homemade mac and cheese that doesn’t contain unwanted gluten:

  • Buy gluten-free pasta: You’d be amazed at how many gluten-free versions are on the market today. Just make sure you cook them as the package recommendations suggest — otherwise, the pasta may tend to stick.
  • Keep the butter, unless you’re opting for non-dairy ingredients: Butter is naturally gluten-free, but some pitmasters prefer to use margarine. Just make sure you choose a high-quality margarine brand that gives you a butter-like taste and finish.
  • Leave those wheat flours behind: Many flours have zero gluten, including almond flour, brown rice flour and teff flour. Just substitute them and you’re golden.
  • Check your cream: Most dairy-based cream is gluten-free, but check the label just in case. A few manufacturers will add gluten-based thickeners.
  • Hold on to the Velveeta: Believe it or not, Velveeta is a gluten-free food. Hallelujah! Pass the homemade mac and cheese!
