Mushroom Duxelles

This versatile recipe can be used as an appetizer, compliment an entrée, or just be eaten, with a spoon, in the kitchen when no-one is looking! Comprised of nothing more than mushrooms, light seasonings, and fresh herbs this dish is sure to be a crowd pleaser! Do yourself a favor and take this one out for a test drive and ENJOY!

Ingredients

  • 1 pound mushrooms, sliced
  • 1 shallot, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/4 cup dry sherry
  • 1 tablespoon fresh thyme
  • Kosher salt, to taste
  • Ground black pepper, to taste

Directions

Heat the olive oil in a medium sized pan.

Add the shallot and cook for one minute.

Add the garlic and cook for 30 seconds.

Add the sherry to the pan and reduce by half.

Add the mushrooms to the pan and season with salt and pepper; cook for five minutes or until the mushrooms become soft.

Remove from the heat and put the mushroom mixture into a food processor.

Add the fresh thyme and pulse in the food processor until your have a coarse spreadable paste.
