Nigerian Christmas Chicken Stew

In Nigeria, Christmas is a festive affair filled with decorations, parades, music, time spent with family, and (of course) food! A West African staple during the holidays is chicken stew and this recipe is very indicative of what you would find there during the celebrations. Enjoy and Merry Christmas!

Ingredients

  • 1 pound of chicken breasts
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 2 tablespoons canola oil, divided
  • 1 onion, thinly sliced
  • 6 cloves garlic, minced
  • 2 tablespoons fresh ginger root, minced
  • 2 cans black eyed peas, drained and rinsed
  • 1 (28oz) can crushed tomatoes
  • 1 large sweet potato, cubed
  • 1 cup chicken stock
  • 1/4 cup peanut butter
  • 2 teaspoons thyme
  • 1 teaspoon cayenne pepper
  • 2 cups cooked brown rice, optional

Directions

In a Dutch oven, heat one tablespoon of the oil.

Season the chicken with salt and pepper and sear for 4 minutes on each side; remove and set aside.

Add the remaining oil to the Dutch oven and cook the onions, garlic, and ginger for one minute.

Add the chicken stock, peas, tomatoes, sweet potatoes, peanut butter, thyme, and cayenne pepper to the Dutch oven and bring to a boil.

Reduce to a simmer and let cook for twenty minutes.

Serve with the cooked rice, if desired, and ENJOY!
