Pickled Broccolini

If you did not like broccoli growing up, then it might be time give it a second chance. This recipe is easy, interesting, fun, and, not mention, way tastier than the dreaded broccoli of your childhood! So give this one a try and ENJOY!

Ingredients

  • 2 bunches broccolini
  • 2 cups mild rice wine vinegar
  • 2 cups water
  • 1 tablespoon kosher salt
  • 1 teaspoon granulated white sugar
  • 3 cloves whole garlic, peeled
  • 2 tablespoon chili paste
  • 1 quart sized canning jar, with lid

Directions

Cut the ends from the broccolini stems, about 1/4 inch off from of the bottom.

Place the prepared broccolini and whole garlic into the canning jar; set aside.

Put the remaining ingredients into a medium sauce pan and bring to boil; let the mixture boil for 2 minutes.

Remove the liquid from the heat and pour directly into the jar, completely covering the broccolini.

Place the lid on the jar immediately and seal tight.

Let the jar stand until cooling to room temperature.

Place in the refrigerator and store for up to one month.
